  • 4 chicken drumsticks skin removed for a clearer broth
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 tsp salt adjust to taste
  • 1 tsp black pepper freshly ground
  • 1 tsp thyme dried or fresh
  • 1 bay leaf
  • 6 cups water or chicken broth
  • 1 tsp apple cider vinegar helps extract nutrients from bones
  • 1 lemon cut into wedges for serving

Instructions
 

  • In a large pot, heat a small amount of oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
  • Add the chicken drumsticks and pour in the water or chicken broth.
  • Stir in salt, black pepper, thyme, bay leaf, and apple cider vinegar.
  • Bring to a boil, then reduce heat and let it simmer for 45-60 minutes, skimming off any foam that rises to the top.
  • Remove the drumsticks, shred the meat off the bones, and return the meat to the soup.
  • Discard the bay leaf, adjust seasoning as needed, and serve hot with a squeeze of fresh lemon.

Notes

For a deeper flavor, roast the drumsticks before adding them to the soup. You can also add rice, noodles, or potatoes for a heartier meal.
