Ingredients
  

  • 1 cup peanut butter creamy or crunchy
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 1 tsp vanilla extract optional, for extra flavor

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract. Stir until well mixed.
  • Scoop 1 tablespoon of dough and roll into a ball. Place on the baking sheet, spacing them about 2 inches apart.
  • Use a fork to press down each cookie, creating a crisscross pattern.
  • Bake for 10-12 minutes or until edges are slightly golden.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For softer cookies, remove from the oven when they look slightly underbaked; they will firm up as they cool.
