Ingredients
1/2 head cauliflower, cut into florets
1 small sweet potato, peeled and cubed
1 cup cooked buckwheat
1 cup cooked chickpeas
1 wedge red cabbage, finely shredded
50g fresh baby spinach
1/4 cup tahini
1/2 cup fresh parsley, packed
1 lemon, juiced
1 clove garlic
1/4 tsp red pepper flakes
2 tbsp olive oil
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss the cauliflower florets and sweet potato cubes with olive oil, salt, and pepper on a baking sheet.
Roast for 25-30 minutes until tender and golden brown.
While vegetables roast, prepare the green sauce by blending tahini, parsley, lemon juice, garlic, red pepper flakes, and 2-3 tablespoons of water until smooth.
In a bowl, layer the spinach at the base, followed by cooked buckwheat, roasted vegetables, chickpeas, and shredded cabbage.
Drizzle the green sauce generously over the bowl before serving.
Notes
You can prep the roasted vegetables and dressing ahead of time to make assembly quick for weekday lunches. Feel free to swap buckwheat for quinoa or brown rice if preferred. The dressing keeps well in the refrigerator for up to 3 days.
