Description
This nutrient-dense wild rice pilaf is a seasonal delight, perfectly balancing earthy textures with the sweetness of crisp apples and the crunch of toasted pecans. Featuring shaved Brussels sprouts and aromatic vegetables simmered in a savory broth, this side dish is both approachable for beginners and sophisticated enough for holiday tables. It offers a satisfying, chewy bite that pairs beautifully with roasted proteins, providing a harmonious blend of savory, sweet, and nutty flavors in every forkful.
Ingredients
1 1/4 cups dry wild rice blend
2 cups lower-sodium vegetable broth
3/4 tsp salt, divided
1/2 cup pecans, roughly chopped
2 Tbsp olive oil
2 Tbsp butter
1 cup yellow onion, finely chopped
3/4 cup celery, finely chopped
1 small apple, finely chopped
1 1/2 tsp poultry seasoning
8 to 10 oz Brussels sprouts, shaved
Instructions
Rinse the wild rice thoroughly under cold water.
In a medium pot, bring the vegetable broth and 1/2 tsp of salt to a boil; add the wild rice, cover, and reduce heat to low to simmer for 40-45 minutes or until tender.
While the rice cooks, heat olive oil and butter in a large skillet over medium heat.
Add the onion and celery to the skillet, sautéing until softened, about 5 minutes.
Add the shaved Brussels sprouts and continue cooking until tender-crisp.
Stir in the chopped apple and poultry seasoning, cooking for another 2 minutes.
Once the rice is cooked, drain any excess liquid and fluff with a fork.
Combine the rice mixture with the vegetables in the skillet, folding in the pecans and remaining salt to taste.
Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of broth if it becomes too dry. You can substitute the vegetable broth with a high-quality halal chicken or turkey stock for deeper flavor.
