Ingredients
2 tablespoons olive oil
1 small yellow onion, finely diced
4 cloves garlic, minced

3 tablespoons tomato paste
1 can (15 oz) fire-roasted diced tomatoes
2 cans (15 oz each) Cannellini beans, rinsed and drained
4 cups vegetable broth
1 tablespoon lemon zest
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
Instructions
Heat the olive oil in a large pot over medium heat.
Add the onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, salt, pepper, and red pepper flakes, cooking for 1 minute until fragrant.
