Ingredients
1 large sweet potato, peeled and cubed
15 ounces canned garbanzo beans, rinsed and dried
2 tablespoons olive oil
1 teaspoon ground cinnamon
1/2 teaspoon smoked paprika
1 cup quinoa
1 cup wild rice
4 cups kale, stems removed and chopped
1 crisp apple, thinly sliced
1/4 cup tahini
2 tablespoons lemon juice
1 tablespoon maple syrup
2 tablespoons warm water
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss diced sweet potatoes and dried chickpeas with olive oil, cinnamon, paprika, salt, and pepper on a baking sheet.
Roast for 25-30 minutes, tossing halfway through, until potatoes are tender and chickpeas are crunchy.
While roasting, cook quinoa and wild rice according to package directions in separate pots or together if timing allows.
In a small bowl, whisk together tahini, lemon juice, maple syrup, and enough warm water to reach a drizzling consistency.
Massage the kale with a drizzle of olive oil until tender.
Assemble bowls by layering the grain base, roasted vegetables, kale, and fresh apple slices.
Drizzle generously with the lemon tahini vinaigrette before serving.
Notes
Store dressing separately from the greens to prevent wilting if meal prepping. You can add toasted pumpkin seeds or walnuts for extra crunch.
