Description

Indulge in a warm, comforting bowl of Vegan Loaded Potato Soup, a plant-based twist on a classic American favorite. This hearty soup features fluffy potatoes, aromatic garlic, and a silky, velvety base made from a traditional roux and creamy plant milk. Enhanced with smoky paprika and customizable toppings like coconut bacon and fresh scallions, this dairy-free dish is perfect for chilly evenings. It is beginner-friendly, incredibly filling, and tastes even better as leftovers, making it the ultimate wholesome meal for your family.

Ingredients

Scale

2 tablespoons vegan butter
1/2 red onion, finely diced
4 cloves garlic, minced
2 teaspoons smoked paprika
4 cups potatoes, peeled and chopped
2 cups vegetable broth
3 cups plain vegan milk
1 teaspoon sea salt
1/2 teaspoon ground black pepper
3 tablespoons vegan yogurt
1/2 cup vegan cheese shreds
Coconut bacon for topping
Fresh scallions for garnish

Instructions

Melt the vegan butter in a large pot over medium heat.
Add the diced red onion and cook until translucent.
Stir in the minced garlic and smoked paprika, cooking for one minute until fragrant.
Add the chopped potatoes and vegetable broth, bringing the mixture to a boil.
Reduce heat and simmer until the potatoes are fork-tender.
Stir in the vegan milk and season with salt and pepper.
Use an immersion blender to partially puree the soup for a creamy texture, leaving some potato chunks.
Stir in the vegan yogurt and vegan cheese until fully melted and smooth.
Ladle into bowls and garnish with coconut bacon and fresh scallions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. The soup will thicken as it cools; simply add a splash of broth or water when reheating. You can use any waxy or starchy potato variety based on your preference.
