Ingredients
1 pound raw Italian turkey sausage, casings removed
1 tablespoon olive oil
1 medium onion, finely diced
1 cup celery, diced
1 cup carrots, diced
3 garlic cloves, minced
2 teaspoons Italian seasoning
4 cups reduced-sodium chicken broth
1 (28-ounce) can no-salt-added diced tomatoes, drained well
1/4 cup tomato paste
1 tablespoon balsamic vinegar
1 bay leaf
1 teaspoon maple syrup (optional)
2 cups packed fresh kale, ribs removed and chopped
1 (19-ounce) can cannellini beans, rinsed and drained
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the turkey sausage and cook, breaking it into small pieces with a wooden spoon, until browned and cooked through.
Add the onion, celery, and carrots to the pot and sauté for 5 to 7 minutes until softened.
Stir in the minced garlic and Italian seasoning, cooking for about 1 minute until fragrant.
Stir in the tomato paste and cook for 2 minutes to caramelize slightly.
Pour in the chicken broth, diced tomatoes, balsamic vinegar, and maple syrup, and add the bay leaf.
Bring the mixture to a simmer, then reduce heat to low and cover; cook for 15 minutes.
Add the cannellini beans and chopped kale, simmering for an additional 5 minutes until the kale is tender.
Remove the bay leaf and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. This soup tastes even better the next day as flavors meld. You can add more broth if you prefer a thinner consistency. Ensure the turkey sausage is pork-free to maintain the integrity of the recipe.
