Ingredients
1 1/2 pounds carrots, peeled and chopped
1 medium sweet potato, peeled and cubed
1 small onion, diced
2 cloves garlic, minced
1 tablespoon freshly grated ginger
4 cups vegetable broth
1/2 cup coconut milk (or non-dairy milk alternative)
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Chop carrots, sweet potato, onion, garlic, and ginger.
2. Add all ingredients to the slow cooker.
3. Cook on low for 6-8 hours or on high for 3-4 hours.
4. Once tender, blend the mixture until smooth using an immersion blender or regular blender.
5. Taste and adjust seasoning if needed.
6. Serve warm with optional toppings like chopped herbs or additional coconut milk.
Notes
Use a low-sodium vegetable broth for better control over salt.
