Ingredients

Scale

1 tablespoon canola oil
1 medium onion, diced
1 large green bell pepper, diced
3 garlic cloves, minced
32 oz chicken broth
2 lbs boneless skinless chicken breast
2 10oz cans Rotel diced tomatoes with green chilies
15 oz can black beans, drained and rinsed
15 oz can pinto beans, drained and rinsed
15 oz can corn kernels, drained
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
Salt and black pepper to taste

Instructions

Heat the canola oil in a large pot or Dutch oven over medium heat.
Add the onion and green bell pepper and sauté until softened, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the chicken breasts, chicken broth, Rotel tomatoes, chili powder, cumin, and oregano to the pot.
Bring to a simmer, then cover and cook for 20 minutes or until chicken is cooked through.
Remove the chicken breasts, shred them with two forks, and return the meat to the pot.
Stir in the drained black beans, pinto beans, and corn.
Simmer for an additional 5-10 minutes to allow the flavors to meld.
Season with salt and pepper to taste and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Top with fresh cilantro, avocado slices, or a squeeze of lime before serving for extra brightness.
