Description

Experience the comfort of a rustic, farm-style potato soup that warms the soul. This velvety, hearty bowl uses Yukon Gold potatoes to achieve a natural, buttery texture without any flour-heavy thickeners. Perfect for busy weeknights or a soothing meal, it combines aromatic vegetables, fresh herbs, and a touch of cream for a restaurant-quality experience right in your home kitchen.

Ingredients

Scale

1 1/2 pounds Yukon Gold potatoes, 1-inch cubed
1 medium yellow onion, finely chopped
2 medium carrots, finely diced
2 stalks celery, chopped
1 tablespoon minced garlic
3 tablespoons unsalted butter or olive oil
1 teaspoon fresh rosemary (chopped) or 1/4 teaspoon dried
1/4 teaspoon crushed red pepper flakes
3 tablespoons all-purpose flour
4 cups vegetable or chicken stock
1 bay leaf
Salt and pepper to taste
1/4 cup heavy cream, half and half, or plain yogurt
1 cup shredded cheddar cheese (optional)

Instructions

In a large pot, melt the butter or heat olive oil over medium heat.
Add the onion, carrots, and celery, cooking until softened, about 5-7 minutes.
Stir in the garlic, rosemary, and red pepper flakes, cooking until fragrant.
Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste.
Slowly whisk in the vegetable or chicken stock and add the bay leaf.
Add the cubed potatoes to the pot and bring to a simmer.
Reduce heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
Remove the bay leaf and stir in the heavy cream or yogurt.
If desired, stir in shredded cheese until melted before serving.
Season with salt and pepper to taste.

Notes

For a smoother, creamier texture, you can partially mash some of the potatoes against the side of the pot using a wooden spoon or potato masher. Store leftovers in an airtight container in the refrigerator for up to 3 days.
