Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 ripe avocado, halved and pitted
1/2 cup crumbled feta cheese (halal-certified preferred)
1/2 red onion, thinly sliced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 lemon, juiced
2 tbsp extra virgin olive oil
Salt and pepper to taste
Instructions
Drain and rinse chickpeas, then pat dry with paper towels
Dice avocado and set aside
In a large bowl, combine chickpeas, avocado, feta, red onion, parsley, and cilantro
In a small bowl, whisk lemon juice, olive oil, salt, and pepper
Toss dressing into salad until well combined
Adjust seasoning and serve fresh
Notes
For a vegan version, substitute vegan feta
