Ingredients
8 chicken tenders (about 1 lb)
2 tablespoons olive oil (divided)
2 teaspoons chicken dry rub
2 tablespoons alcohol-free BBQ sauce
3 small sweet potatoes (approx. 6–7 oz each, peeled and cubed)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
9 oz coleslaw cabbage mix
1/2 cup mayonnaise
1 tablespoon fresh lemon juice or apple cider vinegar
1 1/2 tablespoons sweetener of choice
Optional: pickles and fresh cilantro for garnish
Instructions
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
Roast the sweet potatoes for 25-30 minutes, turning halfway, until tender and caramelized.
While potatoes roast, whisk together mayonnaise, lemon juice or vinegar, and sweetener in a bowl. Fold in the cabbage mix and chill.
Season the chicken tenders with the chicken rub.
Heat 1 tablespoon of olive oil in a skillet over medium-high heat and cook chicken until golden and cooked through.
Brush the cooked chicken with BBQ sauce in the final minute of cooking.
Assemble bowls by layering roasted sweet potatoes, BBQ chicken, and a generous portion of coleslaw.
Notes
You can use an air fryer to roast the sweet potatoes at 400°F for about 15-20 minutes for a faster prep. This dish stores well in the refrigerator for up to 3 days if ingredients are kept in airtight containers. Serve cold slaw atop the warm potatoes and chicken for the best texture contrast.
