Description

A vibrant, nutrient-packed sheet pan meal that brings Thai-inspired flavors to your weeknight table. Cubed sweet potatoes, tender chicken breast, crispy broccoli, and protein-rich chickpeas are roasted together and drizzled with a velvety, homemade peanut sauce. This wholesome dish is dairy-free, gluten-free, and incredibly easy to clean up, making it the perfect quick dinner for busy families who crave big, bold flavors without the stress.

Ingredients

Scale

3 teaspoons avocado oil
1 medium sweet potato, peeled and cubed
3 cups fresh broccoli florets
1 15-ounce can chickpeas, drained and rinsed
1 pound raw chicken breast, cubed
1/4 teaspoon fine salt
1/8 teaspoon black pepper
1/3 cup dry roasted peanuts, for garnish
1/4 cup fresh cilantro, chopped
1/3 cup natural peanut butter
1/4 cup coconut aminos
3 tablespoons lime juice
2 teaspoons rice vinegar
1 teaspoon fresh grated ginger

Instructions

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Place the cubed sweet potato, broccoli florets, chickpeas, and chicken breast on the sheet pan.
Drizzle with avocado oil and season with salt and pepper, tossing everything to coat evenly.
Spread into a single layer and roast for 20-25 minutes or until the chicken is cooked through and potatoes are tender.
While roasting, whisk together peanut butter, coconut aminos, lime juice, rice vinegar, and ginger in a small bowl until smooth (add a splash of warm water if you prefer a thinner consistency).
Drizzle the sauce over the roasted mixture and garnish with chopped peanuts and fresh cilantro to serve.

Notes

Ensure the sweet potato is cut into uniform, small pieces to guarantee they cook at the same rate as the chicken.
For extra spice, add a pinch of crushed red pepper flakes or sriracha to the sauce.
Store leftovers in an airtight container for up to 3 days.
