Ingredients
2 lbs boneless, skinless chicken thighs (cut into 1-inch cubes)
2 tbsp olive oil
1/2 cup low-sodium soy sauce
2 tbsp rice vinegar
1 tbsp fresh ginger, minced
4 cloves garlic, minced
2 tbsp brown sugar
4 tbsp honey
1 tsp toasted sesame oil
4 cups cooked jasmine rice
4 cups steamed broccoli florets
Instructions
In a medium bowl, whisk together soy sauce, rice vinegar, ginger, garlic, brown sugar, honey, and sesame oil to create the teriyaki sauce.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken cubes to the skillet and cook until browned on all sides and cooked through.
Pour the teriyaki sauce over the chicken and simmer for 5-7 minutes until the sauce thickens and glazes the chicken.
Divide the cooked chicken, rice, and steamed broccoli evenly into four meal prep containers.
Allow to cool completely before covering and refrigerating.
Notes
Store in the refrigerator for up to 4 days. You can reheat in the microwave for 1-2 minutes. Add sesame seeds or green onions as a garnish if desired.
