Ingredients
1 large sweet potato, peeled and diced into 1/2-inch chunks
1 can (15 oz) chickpeas, rinsed, drained, and patted dry
2 tablespoons olive oil
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup pecans, toasted
1 bunch curly kale, stems removed and leaves chopped
3 tablespoons apple cider vinegar
2 tablespoons pure maple syrup

Instructions
Preheat your oven to 400°F (200°C).
On a large sheet pan, toss the diced sweet potatoes and chickpeas with olive oil, cinnamon, nutmeg, salt, and pepper.
Spread in a single layer and roast for 25-30 minutes, tossing halfway through, until potatoes are tender and chickpeas are crispy.
