Description

Creamy mashed sweet potatoes are topped with a crunchy brown sugar pecan praline topping for the ultimate Southern-style holiday side dish.

FOR THE SWEET POTATOES:

  • 3 pounds medium sweet potatoes
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup evaporated milk
  • 1/4 cup unsalted butter (melted)

FOR THE TOPPING:

  • 1 cup firmly packed light brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter (melted)
  • 3/4 cup coarsely chopped pecans

Instructions

1. Preheat the oven to 350°. Grease a 1 1/2-quart casserole dish.

2. Peel and slice the potatoes, place them in a medium saucepan, and just cover them with water. Bring to a boil, reduce to a simmer, and cook uncovered for 15 to 20 minutes or until fork-tender.

3. Drain the potatoes and allow them to remain in the colander until most of the steam subsides. Pour the potatoes back into the pot or into a large mixing bowl.

4. Mash the potatoes well with a potato masher or a hand mixer. Add the sugar, vanilla, eggs, evaporated milk, and butter, and mix very well.

5. Pour the sweet potato mixture into the baking dish.

6. Make the streusel topping by combining the brown sugar, flour, salt, butter, and pecans in a medium bowl.

7. Spoon the topping mixture over the sweet potatoes.

8. Bake for 35 to 45 minutes, or until the topping is golden and set.

Notes

For best texture, be sure to let the steam escape from the cooked sweet potatoes before mashing to avoid excess moisture.

This dish can be assembled ahead of time and baked just before serving.
