A flavorful and hearty vegetarian Sweet Potato Black Bean Casserole packed with wholesome ingredients like salsa, black beans, corn, and tortillas—perfect for an easy dinner or meal prep.
Ingredients
- 2.5 Cups of diced Sweet Potato
- 1 1/2 Cup Shredded Cheese
- 1 1/2 Cup Salsa
- 1 Can Black Beans, drained
- 1 Can Shoepeg Corn
- 1/2 Cup diced purple Onion
- 1 Tablespoon Taco Seasoning
- 1/2 Lime, juiced
- 5 Street Taco Tortillas, cut in small squares
Instructions
1. Preheat the oven to 400 F.
2. Dice the sweet potatoes into small bite-sized pieces.
3. Cut onion, add to a large bowl and combine with the lime juice and taco seasoning.
4. Drain black beans and corn and add to the onions.
5. Add sweet potatoes and salsa to the bean mixture and stir.
6. Last dice the tortillas into small squares and add to the bowl.
7. Spread into a greased 9×13 dish and top with the shredded cheese.
8. Bake for 35 minutes.
9. Serve!
Notes
You can heat the sweet potato pieces in the microwave on high for 4-5 minutes before adding to the mixture if you like them really soft.
The smaller you make the sweet potato pieces, the quicker/softer they cook!
