Description

This dish combines juicy chicken with a sweet and tangy sauce made from pineapple and soy. Perfect for busy evenings or casual gatherings, it’s flavorful, family-friendly, and effortless to prepare in the slow cooker.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1⁄2 cup brown sugar
  • 1⁄3 cup soy sauce
  • 1 can (8 oz) crushed pineapple in juice, undrained
  • 1 teaspoon minced garlic
  • 1⁄2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

1. Place the chicken breasts in the bottom of a slow cooker.

2. In a small bowl, mix together the pineapple juice, brown sugar, soy sauce, crushed pineapple, garlic, ginger, salt, and pepper.

3. Pour the pineapple mixture over the chicken, making sure all pieces are well coated.

4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and fully cooked.

5. Remove the chicken from the slow cooker and set aside.

6. In a small bowl, whisk together the cornstarch and water to form a slurry.

7. Stir the slurry into the slow cooker to thicken the sauce.

8. Return the chicken to the pot and cook for an additional 10–15 minutes to allow the sauce to thicken and coat the chicken.

9. Shred the chicken with two forks or leave in whole pieces as desired.

10. Serve over rice or noodles. Garnish with green onions and sesame seeds if desired.

Notes

This recipe pairs well with steamed vegetables or a fresh green salad.

For added flavor, marinate the chicken in the sauce mixture for 1–2 hours before cooking.

Try adding sliced bell peppers or snap peas during the last hour of cooking for a colorful twist.

Store leftovers in an airtight container in the fridge for up to 3 days.
