Description

This comforting stuffed acorn squash is the perfect seasonal meal, pairing the natural, nutty sweetness of roasted squash with a savory filling of chicken Italian sausage, crisp apples, celery, and fresh herbs. It is a visually stunning yet simple dish that brings together protein, produce, and texture in every bite. Ideal for a cozy weeknight dinner or an impressive side dish for gatherings, this recipe is as forgiving as it is delicious.

Ingredients

Scale

3 medium acorn squash
6 tablespoons olive oil (divided)
1 pound halal mild Italian chicken sausage
1 small yellow onion, diced (about 1/2 cup)
1 apple, peeled, cored, and diced (about 1 1/2 cups)
4 cloves garlic, minced
3 ribs celery, diced (about 1 cup)
1 tablespoon fresh sage, finely chopped
2 teaspoons fresh thyme leaves
1/3 cup Italian panko breadcrumbs
1/3 cup freshly grated parmesan cheese
Kosher salt, to taste
Freshly ground black pepper, to taste
1/4 teaspoon red pepper flakes (optional)

Instructions

Preheat your oven to 400 degrees F.
Cut the acorn squash in half lengthwise and scoop out the seeds and stringy pulp.
Brush the cut sides of the squash with 3 tablespoons of olive oil and season generously with salt and pepper.
Place the squash cut-side down on a baking sheet and roast for 30-35 minutes until tender.
While the squash roasts, heat the remaining 3 tablespoons of olive oil in a large skillet over medium-high heat.
Add the chicken sausage and cook until browned, breaking it up into small pieces with a spoon.
Stir in the diced onion and celery, sautéing until softened, about 5 minutes.
Add the garlic, apples, sage, and thyme; cook for an additional 3-4 minutes until the apples are tender.
Stir in the panko breadcrumbs and red pepper flakes, then remove from heat.
Once the squash is tender, flip the halves over and fill the cavities generously with the sausage and apple mixture.
Sprinkle the tops with the grated parmesan cheese.
Return the squash to the oven and bake for another 10-15 minutes, or until the filling is golden and heated through.

Notes

You can roast the squash ahead of time and store in the refrigerator until you are ready to fill and bake. This recipe reheats beautifully for leftovers. Ensure you use a halal-certified chicken Italian sausage to keep the dish compliant with your dietary requirements.
