Description

Strawberry Cheesecake Overnight Oats are an easy, creamy, and tangy make-ahead breakfast packed with protein and flavor. Made with Greek yogurt, cream cheese, oats, and a sweet strawberry reduction, this is a nutritious breakfast both kids and adults will love!


Ingredients

  • 1/2 cup plain greek yogurt
  • 3 oz cream cheese, softened
  • 1 cup almond milk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup old fashioned oats
  • 1 tbsp chia seeds
  • 1/2 cup strawberries, diced
  • Pinch of salt
  • Strawberry Reduction:
  • 1/2 cup strawberries, chopped
  • 1 tbsp pure maple syrup

Instructions

1. Add the softened cream cheese, greek yogurt, almond milk, pure maple syrup, and vanilla extract to a bowl. Mix until smooth and evenly combined.

2. Add the oats, chia seeds, and salt. Stir until fully incorporated.

3. Fold in the diced strawberries.

4. Transfer the mixture to an airtight container and refrigerate overnight.

5. To make the strawberry reduction, add the chopped strawberries and maple syrup to a small pan over medium heat.

6. Mash the strawberries as they soften and allow the mixture to simmer. Remove from heat once thickened.

7. Serve the overnight oats topped with the strawberry reduction and enjoy!

Notes

You can mix the strawberry reduction into the oats before chilling or keep it separate and add when serving.

Use dairy or non-dairy milk based on your preference.

These oats will stay fresh in the fridge for up to 3 days.
