Description

Ingredients

4 cups fresh baby spinach leaves
1.5 cups cherry tomatoes, halved
1 cup crumbled feta cheese
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1 teaspoon dried oregano
Salt and pepper to taste


Instructions

Wash and dry the spinach leaves.
Halve the cherry tomatoes and add to the spinach.
Sprinkle crumbled feta cheese over the salad.
In a small bowl, whisk olive oil, red wine vinegar, honey, Dijon mustard, oregano, salt, and pepper.
Pour the dressing over the salad and toss to combine.
