Ingredients
1 lb cooked chicken breast, shredded or chopped
2 large sweet potatoes, peeled and cut into 1/2-inch fry shapes
3 tbsp olive oil
1 tsp sea salt
1 tsp black pepper
1/2 tsp chipotle pepper
1/2 tsp paprika
1/4 tsp garlic powder
4 cups romaine lettuce or mixed greens
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup mayonnaise
3 tbsp sriracha
2 tsp lemon juice
Instructions
Preheat your oven to 400°F (200°C).
Toss the sweet potato fries with olive oil, sea salt, black pepper, chipotle pepper, paprika, and garlic powder on a large baking sheet.
Roast the sweet potatoes for 25-30 minutes, turning once, until they are golden brown and tender.
While the potatoes roast, whisk together the mayonnaise, sriracha, and lemon juice in a small bowl to make the dressing.
Assemble the bowls by layering the romaine lettuce as a base, followed by the shredded chicken, roasted sweet potatoes, cherry tomatoes, and red onions.
Drizzle the prepared sriracha dressing over the bowls before serving.
Notes
Store leftover dressing in an airtight container for up to 3 days. Customize the heat level by adjusting the amount of sriracha to your preference. If prepping for lunches, keep the dressing separate until serving to maintain the crunch of the vegetables.
