Description

This creamy, dairy-free White Chicken Chili is a wholesome comfort meal that relies on a clever blending technique to achieve a velvety texture. By pureeing white beans with chicken broth, you get a rich, satisfying base packed with fiber and protein. It is a perfect dump-and-go meal for busy schedules, featuring tender chicken, zesty green chiles, and vibrant aromatics, making it a healthy, versatile, and crowd-pleasing dinner option that tastes even better the next day.

Ingredients

Scale

1.5 lbs boneless, skinless chicken breasts or thighs
1 small yellow onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
4 oz can mild diced green chiles
2–3 cups low-sodium chicken broth, divided
1 can cannellini beans, drained and rinsed
1 can Great Northern beans, drained and rinsed
1 cup corn (frozen or canned)
1/2 cup fresh cilantro, chopped
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 fresh lime, juiced

Instructions

Place the chicken, diced onion, bell pepper, and minced garlic into the slow cooker.
Add the green chiles, cumin, oregano, salt, pepper, corn, and one can of drained beans.
In a blender, combine the second can of beans with 1 cup of chicken broth and blend until completely smooth. Pour this mixture into the slow cooker.
Add an additional 1 to 2 cups of chicken broth depending on your preferred thickness.
Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
Remove the chicken, shred it with two forks, and return it to the slow cooker.
Stir in the fresh cilantro and lime juice before serving.

Notes

To thicken further, blend both cans of beans. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Serve with avocado slices or tortilla strips for added texture.
