Description
This hearty, veggie-packed curry is the ultimate weeknight comfort food. Combining creamy coconut milk, aromatic Indian spices, and protein-rich chickpeas, this slow cooker dish is both nourishing and deeply flavorful. It is a fuss-free, one-pot wonder that allows you to set it and forget it, resulting in tender carrots, crisp-tender green beans, and a rich, golden sauce that will make your kitchen smell heavenly.
Ingredients
2 tablespoons avocado or olive oil
2 cups finely chopped onion
3–4 cloves garlic, minced
1 teaspoon grated fresh ginger
2 teaspoons sea salt
1 teaspoon turmeric
1 tablespoon garam masala
1/4 cup tomato paste
1 ½ cups chopped carrot
2 cups fresh green beans, trimmed and cut into ¼-inch pieces
14 ounces canned chickpeas, drained and rinsed
15 ounces canned fire-roasted diced tomatoes
14 ounces canned coconut milk
1 tablespoon honey
2 cups loosely packed baby spinach
Fresh cilantro for garnish
Instructions
Place the onions, garlic, ginger, and oil into the slow cooker vessel and toss lightly.
Add the carrots, green beans, and chickpeas to the cooker.
In a small bowl, whisk together the turmeric, garam masala, tomato paste, sea salt, honey, and coconut milk until smooth.
Pour the coconut milk mixture over the vegetables and chickpeas.
Add the canned tomatoes (with juices) on top.
Cover and cook on low for 6-7 hours or high for 3-4 hours until vegetables are tender.
Stir in the baby spinach during the last 5 minutes of cooking until wilted.
Serve hot, garnished with fresh cilantro if desired.
Notes
Use full-fat coconut milk for a richer, creamier texture or light coconut milk for a lower-calorie, thinner sauce. The honey helps balance the acidity of the tomatoes, but can be replaced with maple syrup or omitted entirely.
