Description
This slow-cooker turkey chili is hearty, healthy, and full of flavor. Lean ground turkey simmers with beans, tomatoes, and spices to create a cozy, comforting meal that’s perfect for game day or meal prep.
Ingredients
1 tbsp neutral oil
1 red onion, chopped
1 green bell pepper, chopped
1 1/2 lbs ground turkey (93% lean)
2 cloves garlic, minced
2 tbsp tomato paste
1 (28 oz) can chopped tomatoes
1 (15 oz) can black beans, rinsed
1 (15 oz) can kidney beans, rinsed
1 1/2 cups low-sodium chicken broth
2 tsp chili powder
1 tsp cumin
1 tsp oregano
Salt and pepper, to taste
Shredded cheddar and green onions, for garnish
Instructions
1. Heat oil in a skillet over medium heat. Sauté onions and bell pepper for 3–4 minutes until softened.
2. Add ground turkey, breaking it up with a spoon. Cook until browned.
3. Stir in tomato paste and cook for 1 minute. Transfer mixture to slow cooker.
4. Add garlic, tomatoes, black beans, kidney beans, chicken broth, chili powder, cumin, oregano, salt, and pepper. Stir to combine.
5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
6. Taste and adjust seasoning. Add a splash of lime juice or vinegar if desired.
7. Serve hot, garnished with shredded cheddar and green onions.
Notes
Add sweet potato cubes, corn, or zucchini for extra vegetables.
Substitute ground beef for a richer chili.
For a creamy twist, stir in 1/4 cup cream cheese before serving.
This chili freezes well—cool completely before storing in freezer bags.
