1 can (14 oz) full-fat coconut milk
1 cup unsweetened pumpkin puree
2 tablespoons red curry paste (check label for no alcohol/pork)
1 tablespoon ginger, minced
3 cloves garlic, minced
1 onion, diced
1 red bell pepper, sliced
1 tablespoon olive oil
Salt and pepper to taste
Fresh cilantro for garnish
Cooked jasmine rice for serving


Instructions

Place the diced chicken, onion, and bell pepper into the slow cooker.
In a medium bowl, whisk together the coconut milk, pumpkin puree, red curry paste, minced ginger, and garlic until smooth.
Pour the mixture over the chicken and vegetables in the slow cooker and stir to coat evenly.
Season with a pinch of salt and pepper.

Notes
