Description
This rustic, effortless dish combines high-quality chicken or turkey sausage with sweet bell peppers and tender onions. Slowly braised in a flavorful tomato-based sauce, this comfort food dinner is perfect for busy weeknights. It delivers a savory, herb-infused meal that satisfies the whole family and is versatile enough to be served over rice, in sub rolls, or with crusty bread.
Ingredients
6 large bell peppers, sliced into thick strips
1 large sweet onion, sliced
2 cloves garlic, minced
1.5 lbs Italian-style chicken or turkey sausage links
2 cups favorite marinara sauce
2 teaspoons Italian seasoning
1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon cracked black pepper
Instructions
Place the sliced bell peppers, onions, and minced garlic into the bottom of the slow cooker.
Arrange the chicken or turkey sausage links on top of the vegetables.
In a small bowl, combine the marinara sauce, Italian seasoning, dried basil, salt, and black pepper.
Pour the sauce mixture evenly over the sausage and vegetables.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the peppers are tender and the sausage is cooked through.
Serve hot, either as is, over rice, or inside toasted rolls.
Notes
Ensure the sausage links remain whole while cooking if you prefer them firm, or slice them beforehand if you want the flavors to meld more deeply. Store leftovers in an airtight container in the refrigerator for up to 3 days.
