Ingredients
2 boneless, skinless chicken breasts
1 cup uncooked white rice
1 small onion, sliced
2 garlic cloves, minced
1/2 cup fresh lemon juice (about 2 lemons)
1 tsp dried thyme
1 tsp dried rosemary
1 tbsp olive oil
Salt and pepper to taste
1 cup chicken or vegetable broth (optional)
Instructions
Place chicken breasts in the slow cooker.
Add onion, garlic, lemon juice, herbs, olive oil, salt, pepper, and rice.
If using broth, pour it in

Let sit for 10 minutes before serving.
Notes
Add frozen peas or carrots during the last hour of cooking.
Use low-sodium broth for a lighter flavor.
Garnish with fresh parsley before serving.
