Description

Experience the ultimate comfort of a traditional lasagna in a convenient, bowl-friendly format. This Slow Cooker Lasagna Soup simplifies the process by combining hearty ground meat, aromatic garlic, and a rich tomato-based broth into one effortless pot. It is a perfect, stress-free meal for chilly evenings, offering all the classic Italian flavors without the tedious layering process. Finished with a creamy touch of ricotta, it is a satisfying crowd-pleaser that brings a warm hug to your kitchen table.

Ingredients

Scale

2 teaspoons olive oil
1 pound lean ground beef or ground turkey
1 small yellow onion, finely diced
5 cloves garlic, minced
4 cups chicken broth (ensure no alcohol content)
2 cups marinara sauce
15 oz can diced tomatoes
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon onion powder
8 oz lasagna noodles, broken into bite-sized pieces
1 cup ricotta cheese for serving
1/2 cup shredded mozzarella cheese for serving
Fresh basil for garnish

Instructions

Heat olive oil in a skillet over medium-high heat and brown the ground meat with the diced onion.
Drain excess fat and transfer the meat mixture to the slow cooker.
Add the minced garlic, chicken broth, marinara sauce, diced tomatoes, basil, parsley, and onion powder to the slow cooker.
Stir well, cover, and cook on low for 4 to 6 hours or high for 2 to 3 hours.
Thirty minutes before serving, stir in the broken lasagna noodles.
Cover and continue to cook until the noodles are tender.
Ladle the soup into bowls and top with a dollop of ricotta cheese and a sprinkle of mozzarella.
Garnish with fresh basil before serving.

Notes

You can add chopped spinach or kale at the same time as the noodles for extra nutrition. If the soup becomes too thick after adding noodles, add a splash more broth. Store leftovers in an airtight container for up to 3 days.
