1 1/2 lbs. lean ground beef
1 1/2 lbs. red potatoes, cut into bite-size chunks
12 oz. carrots, chopped into chunks
1 1/2 cups yellow onion, chopped
1 cup celery, chopped
3 cups unsalted chicken broth
1 Tbsp beef base
1 Tbsp Worcestershire sauce
1 Tbsp fresh minced rosemary
2 tsp fresh minced thyme
1 Tbsp minced garlic
2 Tbsp tomato paste
1 Tbsp olive oil
Salt and black pepper to taste


Instructions

Heat the olive oil in a skillet over medium-high heat and brown the ground beef until fully cooked, then drain excess fat.
Transfer the cooked ground beef into the slow cooker.
Add the prepared potatoes, carrots, onions, celery, and minced garlic to the slow cooker.
In a small bowl, whisk together the beef base, Worcestershire sauce, tomato paste, and chicken broth.
Pour the broth mixture over the beef and vegetable mixture in the slow cooker.
Stir in the fresh rosemary and thyme, then season with salt and black pepper to taste.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the vegetables are tender.
Adjust seasoning if necessary and serve warm.

Notes

For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the stew 30 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. This recipe is naturally free from pork products.
