Ingredients
- 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes
- 1.5 lbs baby potatoes or Yukon Gold potatoes, halved
- 4 tbsp unsalted butter, melted
- 6 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 cup beef broth
- Salt and pepper to taste
- Optional: olive oil for searing, garlic powder, smoked paprika, Worcestershire sauce, fresh parsley, grated Parmesan cheese
Instructions
1. Season beef cubes with salt, pepper, garlic powder, and smoked paprika. Optionally, sear them in olive oil until browned.
2. Place beef in the slow cooker along with halved potatoes seasoned with salt and pepper.
3. Mix melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce in a bowl. Pour over the meat and potatoes.
4. Cover and cook on low for about 8 hours until the beef is tender.
5. Serve garnished with fresh parsley and grated Parmesan cheese.
Notes
