Description

This comforting and hearty soup is the perfect meal for busy days. Combining tender shredded chicken, earthy wild rice, and a vibrant medley of fresh vegetables, this dish offers a velvety, creamy texture that warms the soul. Effortless to prepare, simply toss the ingredients into your slow cooker and let it develop deep, savory flavors while you tackle your daily tasks. It is a nutritious, balanced dinner that serves as a reliable staple for any family looking for a home-cooked, stress-free meal.

Ingredients

Scale

3 cups shredded chicken
1 cup uncooked wild rice, rinsed
4 cups low sodium chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic, minced
1 yellow onion, diced
4 carrots, peeled and diced
4 stalks celery, diced
8 ounces baby bella mushrooms, sliced
2 sprigs fresh rosemary
3 sprigs fresh thyme
2 bay leaves
2 cups heavy whipping cream
1 tablespoon cornstarch
1/4 cup fresh parsley, chopped

Instructions

Place the shredded chicken, rinsed wild rice, chicken broth, salt, pepper, garlic, onion, carrots, celery, and mushrooms into a 6-quart slow cooker.
Stir in the rosemary, thyme, and bay leaves.
Cover and cook on high for 4 hours or low for 7-8 hours until the rice is tender.
In a small bowl, whisk together the heavy cream and cornstarch until smooth.
Stir the cream mixture into the slow cooker during the last 30 minutes of cooking to thicken the soup.
Remove the bay leaves and herb sprigs before serving.
Top with fresh parsley if desired and serve hot.

Notes

Ensure you rinse the wild rice thoroughly before adding to the pot to remove excess starch. If you prefer a thinner soup, you can reduce the cornstarch or the amount of heavy cream. This soup stores well in an airtight container in the refrigerator for up to 3 days.
