Ingredients
12 oz. halal-certified turkey kielbasa, sliced
2 small russet potatoes, peeled and diced
2 cups chicken broth
1 cup non-alcoholic sparkling apple cider
2 medium carrots, peeled and sliced
1 small yellow onion, finely diced
1/2 tsp. dried thyme
1/2 tsp. sea salt
1/4 tsp. cayenne pepper
1/2 tsp. garlic powder
1 cup shredded sharp cheddar cheese
1/2 cup heavy cream
Instructions
Place the sliced kielbasa, diced potatoes, sliced carrots, and diced onion into the slow cooker.
Add the chicken broth, non-alcoholic sparkling apple cider, thyme, salt, cayenne pepper, and garlic powder.
Stir the ingredients gently to combine.
Cover and cook on low for 6-8 hours or on high for 3-4 hours until potatoes are tender.
Stir in the shredded cheddar cheese and heavy cream until melted and combined.
Serve warm in bowls.
Notes
Ensure the turkey kielbasa is labeled halal to keep the recipe strictly pork-free. If you prefer a thicker soup, mash a few of the cooked potato chunks against the side of the slow cooker before adding the cheese and cream.
