Description

This Sloppy Joe Casserole Recipe is loaded with juicy ground beef and noodles smothered in a cheesy Manwich sauce with tomatoes and corn!


Ingredients

  • 1 lb. ground beef, 85% lean
  • 1/2 cup onions, diced
  • 1 (15.5 oz) can Manwich sauce
  • 2 1/2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, not drained
  • 3/4 pound farfalle pasta, uncooked
  • 8 oz. Velveeta cheese, cubed
  • 1 cup corn, frozen or drained from a can
  • 1 1/2 cups cheddar, shredded

Instructions

1. Preheat oven to 375 degrees.

2. Cook and crumble the ground beef in a large, high-walled skillet pot over medium-high heat for 2 minutes. Add the onions and cook for 5 more minutes, or until the beef is browned and the onions are softened. Drain grease.

3. Add Manwich sauce, chicken broth, and undrained diced tomatoes to the skillet and bring to a gentle boil.

4. Add the uncooked pasta and stir to combine.

5. Cover and let it boil gently until the pasta is al dente, stirring occasionally to prevent sticking. Add a few extra minutes than the package instructions. Taste-test a noodle before proceeding.

6. Reduce heat to low. Stir in the corn.

7. Add cubed Velveeta, cover the pot, and let the cheese melt. Gently stir to combine.

8. Transfer the mixture to a lightly greased 9×13 inch casserole dish.

9. Top with shredded cheddar cheese.

10. Cover and bake for 15 minutes.

11. Remove from oven and serve hot, ideally with cornbread.

Notes

Make Ahead Method: Assemble the casserole and top with cheese. Cover and refrigerate for up to 3 days. Let sit at room temperature for 30 minutes before baking at 350°F for 25 minutes.

You can use other pasta shapes like penne—just adjust the cooking time accordingly.

Using 3/4 pound pasta results in a saucier dish, but you may use a full pound if preferred.
