Sloppy Joe Bowls offer a nutritious, modern twist on a childhood favorite by replacing traditional buns with roasted sweet potatoes. This savory dish features seasoned ground beef in a tangy, tomato-based sauce, creating a balanced and comforting meal. It is perfect for busy weeknights, meal prepping, or satisfying picky eaters with deep, nostalgic flavors that are healthier and less messy than a standard sandwich.


Ingredients

1.5 lbs sweet potatoes (about 3 medium sized)
2 tbsp avocado oil
1/4 tsp garlic powder
1/4 tsp paprika
1/4 tsp salt
1/8 tsp black pepper
2 tsp avocado oil
1 small yellow onion, diced
1 small bell pepper, diced
1 lb lean ground beef
1 cup tomato sauce
2 tbsp tomato paste
1 tbsp apple cider vinegar
1 tbsp yellow mustard
1 tbsp coconut sugar or brown sugar


Instructions

Preheat oven to 400°F (200°C).
Peel and dice sweet potatoes into 1/2-inch cubes.
Toss sweet potatoes with 2 tbsp oil, garlic powder, paprika, salt, and pepper on a baking sheet.
Roast for 25-30 minutes, tossing halfway, until golden and tender.
While potatoes roast, heat remaining oil in a large skillet over medium heat.
Add onion and bell pepper, sautéing until soft.
Add ground beef and cook until browned, breaking it up with a spoon; drain excess fat.
Stir in tomato sauce, tomato paste, vinegar, mustard, and sugar.
Simmer the sauce for 8-10 minutes until thickened.
Serve the meat mixture over the roasted sweet potatoes.

Notes

The meat mixture freezes perfectly for up to 3 months. For a vegan twist, substitute the ground beef with cooked lentils or meatless crumbles. Add a dash of chili powder for an extra kick of heat.
