Ingredients
1 lb boneless, skinless chicken breast (cubed)
1 lb baby red potatoes (halved)
2 cups broccoli florets
1 large red bell pepper (sliced)
2 tbsp lemon juice
1 tbsp apple cider vinegar
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper (optional)
1 cup shredded cheddar cheese (optional)
Instructions
Preheat oven to 425°F (200°C)
Place potatoes on a baking sheet, drizzle with lemon juice and vinegar, and toss with paprika, garlic powder, salt, and pepper
Roast potatoes 15 minutes
Add chicken, broccoli, bell pepper, and remaining seasonings; toss to combine
Return to oven and roast 20-25 minutes until chicken reaches 165°F and veggies are tender
Top with optional cheese if using
