A quick, healthy salad featuring charred lemon-infused grilled chicken, vibrant romaine, and a tangy Dijon-lemon dressing. Easy to customize with seasonal vegetables and textures.
Ingredients
2 boneless, skinless chicken breasts
1 lemon, zested and juiced
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
5 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1/2 cup diced cucumber
1/4 cup sliced almonds, toasted
1 avocado, sliced
1 small beet, roasted and cubed (optional)
Dressing: 2 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp lemon juice
1 tsp honey or maple syrup
1 clove garlic, minced
Salt and pepper to taste
Instructions
Preheat grill or grill pan to medium-high heat
Season chicken breasts with paprika, garlic powder, lemon zest, and olive oil
Grill chicken for 5-7 minutes per side until charred and fully cooked
While chicken cooks, prepare the dressing by whisking olive oil, Dijon mustard, lemon juice, honey, garlic, salt, and pepper
Toss romaine, cherry tomatoes, cucumber, and optional beet in a large bowl
Add dressing just before serving
Top with sliced grilled chicken, toasted almonds, avocado slices, and additional lime or lemon wedges
Notes
For advance prep: Grill and store chicken separately until ready to assemble
Swap honey for maple syrup or adjust sweetness to taste
Add crumbled queso blanco or feta if desired
Skip avocado for lower fat option
