Description

This comforting Shrimp Tomato Soup is the perfect solution for busy weeknights, blending the rich, savory depth of quality marinara with succulent shrimp and tender orzo. By swapping traditional wine for vegetable broth, this Mediterranean-inspired dish remains completely alcohol-free while retaining a complex, restaurant-quality flavor. It is a hearty, nutritious one-pot meal that comes together in mere minutes, making it a reliable favorite for feeding the whole family without any fuss or complicated culinary techniques.

Ingredients

Scale

2 teaspoons olive oil
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper
3/4 teaspoon dried garlic
1/4 cup vegetable broth (non-alcoholic deglazer)
2 cups low-sodium vegetable broth
1/2 cup water
1/2 cup orzo (uncooked)
2 cups high-quality marinara sauce
12 ounces large shrimp, peeled and deveined
1 jarred roasted red pepper, roughly chopped
2 tablespoons fresh oregano, chopped

Instructions

Heat the olive oil in a large pot over medium heat.
Add the dried oregano, crushed red pepper, and dried garlic, sautéing until fragrant.
Pour in the 1/4 cup vegetable broth to deglaze the pot, scraping up any browned bits.
Add the 2 cups of vegetable broth, water, and marinara sauce; stir well to combine and bring to a simmer.
Stir in the uncooked orzo and cook for about 7-9 minutes, or until the pasta is nearly tender.
Add the shrimp and chopped roasted red pepper to the pot.
Simmer for an additional 3-4 minutes, or until the shrimp are pink and opaque throughout.
Remove from heat, stir in the fresh oregano, and serve warm.

Notes

Feel free to stir in a handful of fresh baby spinach or kale at the very end for extra nutrition. This soup stores well in an airtight container in the refrigerator for up to 2 days; note that the orzo will continue to absorb liquid, so add a splash of water when reheating.
