Ingredients
1/2 cup prepared pesto
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil, divided
1 pound large raw shrimp, peeled and deveined
4 cups fresh arugula
8.5 ounces cooked quinoa and rice blend
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1 large avocado, diced or sliced
Salt and pepper to taste
Instructions
In a small bowl, whisk together the pesto, balsamic vinegar, and 1 tablespoon of olive oil to create the dressing.
Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.
