Ingredients
1 rotisserie chicken, shredded
8 cups chicken broth
1 cup mushrooms, sliced
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 teaspoon thyme
Salt and pepper, to taste
2 cups egg noodles (optional)
Instructions
1. Heat a large pot over medium heat and add onion, garlic, carrots, and celery; sauté 5–6 minutes until softened and fragrant
2. Stir in mushrooms and cook for 4–5 minutes until lightly browned
3. Pour in chicken broth and bring mixture to a boil, then reduce to a gentle simmer
4. Add shredded rotisserie chicken, thyme, salt, and pepper; simmer 10 minutes to blend flavors
5. If using egg noodles, stir them in and cook until tender, 8–10 minutes
6. Ladle soup into bowls and serve hot with crusty bread
