Description

A cozy, nourishing Buddha bowl capturing the essence of winter with roasted root vegetables, crispy chickpeas, and fluffy quinoa. This meal balances earthy, caramelized flavors with a creamy tahini drizzle. It is a perfect, plant-based solution for busy days when you need a hearty, healthy meal that feels like a warm embrace. Simple to prepare and easy to store, this bowl is designed to keep you sustained and satisfied through the coldest months of the year.

Ingredients

Scale

1 cup dry quinoa
2 cups water or vegetable broth
2 cups sweet potatoes, cubed
2 cups Brussels sprouts, halved
1 can (15 oz) chickpeas, drained and rinsed
3 tbsp olive oil
1 tsp smoked paprika
1/2 tsp ground cumin
1/4 cup tahini
2 tbsp lemon juice
1 tbsp maple syrup
2–3 tbsp warm water (to thin dressing)
Salt and pepper to taste

Instructions

Preheat your oven to 400°F (200°C).
On a large sheet pan, toss the sweet potato cubes, halved Brussels sprouts, and chickpeas with olive oil, smoked paprika, cumin, salt, and pepper until well coated.
Spread the vegetables and chickpeas in a single layer and roast for 25-30 minutes until tender and golden brown.
While the vegetables roast, rinse the quinoa and bring it to a boil with water or broth in a saucepan.
Reduce heat, cover, and simmer for 15 minutes, then fluff with a fork.
In a small bowl, whisk together the tahini, lemon juice, maple syrup, and enough warm water to reach a pourable consistency.
Assemble bowls by layering cooked quinoa topped with the roasted vegetable medley.
Drizzle generously with the creamy tahini dressing before serving.

Notes

Store the components in separate airtight containers in the refrigerator for up to 4 days for easy meal prep. Add fresh greens like kale or arugula to the base if desired for extra texture.
