Description
A vibrant and hearty plant-forward dish that perfectly balances caramelized sweet potatoes with the satisfying density of protein-rich black beans. Inspired by Mexican flavor profiles, this salad uses fresh lime, cilantro, and earthy cumin to create a bright, nutrient-dense meal. It is remarkably easy to prepare, holds up well in the refrigerator, and serves beautifully as a main dish or a standout side for any occasion.
Ingredients
1 pound sweet potatoes, peeled and diced into 3/4-inch cubes
1 tablespoon extra virgin olive oil
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1 14.5-ounce can black beans, rinsed and drained
1/2 red onion, finely diced
1/2 cup fresh cilantro, chopped
1 lime, juiced
1 tablespoon extra virgin olive oil (for dressing)
Coarse sea salt to taste
Freshly ground black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss the diced sweet potatoes with 1 tablespoon of olive oil, cumin, red pepper flakes, salt, and pepper on a baking sheet.
Roast for 25-30 minutes, or until the potatoes are tender and golden-brown, flipping halfway through.
While the potatoes roast, combine the rinsed black beans, diced red onion, and chopped cilantro in a large mixing bowl.
Once the potatoes have finished roasting, let them cool slightly for 5 minutes.
Add the warm potatoes to the bowl with the bean mixture.
Drizzle with the lime juice and additional olive oil, then toss gently to combine.
Season with extra salt and pepper if desired and serve warm or at room temperature.
Notes
This salad can be stored in an airtight container in the refrigerator for up to 4 days. It makes for an excellent meal-prep lunch. For added texture, consider adding toasted pumpkin seeds or diced avocado right before serving.
