Description
A fall staple dish that features tender delicata squash roasted to perfection with a sticky-sweet glaze, offering a cozy and nutty flavor.
Ingredients
- 2 medium delicata squash (about 1.5 pounds total), washed and dried
- 2 tablespoons (30ml) olive oil, extra virgin if possible
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon black pepper, freshly ground
- 1 teaspoon ground cinnamon (optional)
- 1 tablespoon pure maple syrup
Instructions
1. Preheat and Prep – Preheat oven to 400°F (200°C). Wash the delicata squash thoroughly under running water to remove any dirt or grit.
2. Slice It Up – Cut each squash in half lengthwise and scoop out the seeds. Slice into 1/2-inch thick half-moons, leaving the skin on for a crispy texture.
3. Season Like a Pro – In a large bowl, toss the squash slices with olive oil, salt, pepper, and cinnamon (if using). Ensure each piece is evenly coated for balanced seasoning.
4. Arrange and Roast – Spread the seasoned squash in a single layer on a parchment-lined baking sheet. Roast for 25–30 minutes, flipping halfway through for even browning.
5. Glaze and Finish – In the last 5 minutes of roasting, drizzle the maple syrup over the squash. Roast until the edges are caramelized and sticky-sweet.
6. Serve Hot – Remove from the oven, let cool slightly, and serve warm. Enjoy the cozy, sweet, and nutty flavors of perfectly roasted delicata squash.
Notes
For extra crunch, sprinkle toasted pecans or pumpkin seeds before serving. Try drizzling with balsamic glaze or adding a pinch of cayenne for a sweet-and-spicy twist. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
