Description

These vibrant, plant-forward roasted cauliflower burrito bowls offer a satisfying, hearty meal that swaps heavy proteins for perfectly caramelized, spice-rubbed cauliflower. Packed with the earthy richness of black beans, sweet fresh corn, and zesty lime-infused pico de gallo, this dish is an approachable, nutritious, and texture-rich masterpiece. It is ideal for busy weeknights or efficient meal prepping, celebrating farm-fresh ingredients without the need for complex techniques.

Ingredients

Scale

1 cup rice (white or brown)
1 large head cauliflower, cut into florets
1 tablespoon olive oil
1 tablespoon taco seasoning
1 14-ounce can black beans, rinsed and drained
1/2 cup water
2 roma tomatoes, diced
1/2 small red onion, minced
Juice of 2 fresh limes
1/2 cup fresh cilantro, chopped
2 ears fresh corn, kernels sliced off
1 ripe avocado, sliced

Instructions

Preheat your oven to 400°F (200°C).
Toss the cauliflower florets with olive oil and taco seasoning on a baking sheet until evenly coated.
Roast the cauliflower for 20-25 minutes until golden brown and tender.
Cook the rice according to package instructions.
In a small saucepan, combine black beans with 1/2 cup water and simmer for 5 minutes; lightly mash a few beans to create texture.
In a bowl, mix the diced tomatoes, red onion, lime juice, and cilantro to make the pico de gallo.
Divide the cooked rice into bowls and top with roasted cauliflower, seasoned beans, raw corn, pico de gallo, and fresh avocado slices.

Notes

Feel free to add a dollop of Greek yogurt or extra salsa for moisture. Store leftovers in airtight containers for up to 3 days. The cauliflower can be roasted ahead of time and reheated in an air fryer or oven for optimal crispness.
