2 medium acorn squashes
2 tablespoons extra virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon kosher salt
1/2 teaspoon smoked paprika
1/4 teaspoon ground black pepper
1/4 teaspoon ground cinnamon
Zest and juice of 1/2 an orange
1/2 cup pomegranate arils
1/4 cup shelled pistachios, chopped
1/4 cup fresh parsley, chopped
2 tablespoons chili crisp (ensure no pork/alcohol content)


Instructions

Preheat your oven to 400°F (200°C).
Cut the acorn squash into 1-inch thick rounds and scoop out the seeds using a spoon.
In a small bowl, whisk together the olive oil, cumin, coriander, salt, smoked paprika, black pepper, and cinnamon.
Arrange the squash slices on a parchment-lined baking sheet.
Brush the spice mixture evenly over both sides of the squash slices.
Roast for 25-30 minutes, turning halfway through, until the squash is golden and tender.
Once roasted, transfer to a serving platter.
Drizzle with fresh orange juice and sprinkle with the orange zest, pomegranate arils, chopped pistachios, and fresh parsley.
Finish with a generous drizzle of chili crisp before serving.

Notes

Select acorn squash that feels heavy for its size for the best texture. If you prefer more heat, add an extra teaspoon of chili crisp. Store leftovers in an airtight container for up to 3 days, though the crunchies are best added fresh right before serving.
