Ingredients
6 cups mixed greens (such as butter lettuce and spinach)
1 cup thinly sliced endive
1 cup thinly sliced radicchio
1 medium fennel, julienned
1 red bell pepper, sliced
1 cup watermelon radish, sliced
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 red onion, thinly sliced
Juice of 2 limes
1/4 cup extra virgin olive oil
1 clove garlic, minced
1 teaspoon honey
Salt and freshly ground black pepper, to taste
Instructions
In a large bowl, combine the mixed greens, endive, radicchio, fennel, red bell pepper, watermelon radish, cilantro, mint, and red onion.
In a small bowl, whisk together lime juice, olive oil, minced garlic, honey, salt, and black pepper to make the dressing.
Pour the dressing over the salad and toss gently until all ingredients are evenly coated.
