Ingredients
2 cups chopped fresh pineapple
1 cup diced kiwi
1/4 cup toasted shredded coconut
1/4 cup fresh lime juice
2 tbsp honey
1 tbsp grated lime zest
1 tbsp dried mint (optional)
1 tbsp sparkling water (optional)
Instructions
1. In a large bowl, combine pineapple and kiwi.
2. In a separate small bowl, whisk together lime juice, honey, and lime zest.
3. Pour dressing over fruit and toss gently.
4. Sprinkle toasted coconut and mint on top.
5. Chill for at least 30 minutes before serving. Add sparkling water to dressing for a fizzy variation, if desired.
