Ingredients
- 8 oz egg noodles – spaghetti, ramen, or any long pasta
- 4 Tbsp butter – salted or unsalted
- 8 cloves garlic – minced
- 2 Tbsp light soy sauce
- 1 Tbsp oyster sauce
- 1 Tbsp brown sugar
- 1 tsp sesame oil
- Pinch chilli flakes – optional
- 2 green onions – sliced (white and green parts separated)
- Small handful grated parmesan – optional but recommended
Instructions
1. Boil noodles in salty water. Taste the water; it should remind you of the beach you actually like.
2. While noodles cook, melt butter in a wide pan. Let it foam and brown until nutty and golden.
3. Add minced garlic and stir for about 15 seconds, just until fragrant and sizzling.
4. Stir in soy sauce, oyster sauce, brown sugar, sesame oil, and chilli flakes. Let simmer for 30 seconds until glossy.
5. Transfer noodles directly from pot to pan with tongs, allowing a bit of pasta water to come along.
6. Toss noodles in the sauce for about 1 minute to coat. Add more pasta water if needed to loosen.
7. Remove from heat. Add grated parmesan and green onions. Toss again to combine.
8. Serve immediately from the pan or plated. Both are valid life choices.
Notes
Jarred garlic works, but rinse it first to remove the acidic bite.
Use a light-colored pan to better see when butter browns.
Salt cautiously—soy and oyster sauce already bring plenty.
No oyster sauce? Sub with hoisin and omit the sugar.
Gluten-free? Rice noodles work—just undercook slightly to avoid tearing.
