A vibrant summer salad combining juicy watermelon, ripe peaches, crisp cucumber, tangy feta, and fresh mint. Light, refreshing, and perfect for barbecues or warm-weather meals.
Ingredients
4 cups cubed watermelon
2 ripe peaches, cut into 1-inch chunks
1 English cucumber, seeded and diced
1/2 cup crumbled feta cheese
1/4 cup fresh mint leaves, chopped
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon honey
Salt to taste
Instructions
Prep all fruits and vegetables.
In a large bowl, combine watermelon, peaches, and cucumber.
Add crumbled feta and chopped mint.
In a small bowl, whisk balsamic vinegar, olive oil, and honey.
Pour dressing over the salad.
Toss gently and season with salt.
Chill for 10-15 minutes before serving.
Notes
Use ripe, seedless watermelon and firm peaches for best texture.
Substitute goat cheese for feta if preferred.
Store leftovers refrigerated for up to 1 day. Best served chilled.
